Whole-grain Bread with Boiled Egg
I love bread and there is nothing that makes me happier than a toast with tomato and oil for breakfast. Defenders of the paleo diet argue that 2 million years ago our ancestors were hunter gatherers and did not eat cereals. I understand these arguments and I find it sensible to restrict the amount of carbohydrates, but I do not think it necessary to remove them from our diet altogether. A carbohydrate intake of lesser than 23% can cause health problems, headaches, loss of attention and memory.
- Whole rye bread
- A boiled egg
- Spinach leaves
- Mozzarella cheese
- Salt and pepper
- Two slices of whole wheat bread. Preferably use whole wheat rye bread or spelled flour. They are much richer in fiber.
- Cut tomatoes and mozzarella cheese into slices and add to bread.
- Add the spinach leaves and the boiled egg.
- Pepper it to taste.
