Whole-grain Bread with Boiled Egg

I love bread and there is nothing that makes me happier than a toast with tomato and oil for breakfast. Defenders of the paleo diet argue that 2 million years ago our ancestors were hunter gatherers and did not eat cereals. I understand these arguments and I find it sensible to restrict the amount of carbohydrates, but I do not think it necessary to remove them from our diet altogether. A carbohydrate intake of lesser than 23% can cause health problems, headaches, loss of attention and memory.

Breakfast recipes


  • Whole rye bread
  • A boiled egg
  • Tomato
  • Spinach leaves
  • Mozzarella cheese
  • Salt and pepper


  1. Two slices of whole wheat bread. Preferably use whole wheat rye bread or spelled flour. They are much richer in fiber.
  2. Cut tomatoes and mozzarella cheese into slices and add to bread.
  3. Add the spinach leaves and the boiled egg.
  4. Pepper it to taste.
